The Parker Distillery

As proud proponents of premium production, we've blended our passions to establish Parker Gin.

Expanding our vision of “Quality without compromise”, our range of premium Gins has been developed in partnership between the Parker winemaking team, headed by Andrew Hardy, and master distiller Darin Kinzie.

Purposeful use of botanicals and an infusion of Parker Estate wines complements the classic styles and simple serving suggestion of tonic and citrus.

Cabernet Gin

Inspired by the full flavours of our iconic Cabernet, this Gin displays rich and full-bodied characteristics with great depth of colour. Blended to the spice end of the flavour spectrum.

Eminently drinkable over ice or neat, in place of fortifieds or whiskey.

Premium Dry Gin infused with sixteen botanicals including Juniper, Coriander, and Angelica along with Black Pepper, Cardamon, Fennel, Star Anise, Nutmeg, Cassia.

That base is then re-distilled in the 300 litre still, through four plates, as above with more Juniper, Coriander, and Angelica added as well as the remaining botanicals. That distillate is then blended with a percentage of a gin distillate with more lifted components (Orange peel, Lemon Verbena, Ginger, cassia) and then rested. This concentrated base is then cut with clean neutral spirit and blended with Parker Estate Cabernet, then cut back to 40% ABV with rainwater.

The result is a delicious dry Gin displaying varietal Cabernet flavours including red berries, liquorice, violets & spice with the colour in glass showing deep ruby red, to bright purple with the addition of tonic.  


Rosé Gin

Dry Gin infused with ten botanicals and blended with premium, Parker Rosé.

Juniper, Coriander Seed, Angelica Root, Orris Root, Almonds, Orange Peel, Lemon Peel, Lemon Myrtle, and Rose petal are soaked for 12-14 hrs in 96.6% Grain spirit prior to being loaded into the still with the remaining ingredients in the pot and gin basket and diluted down to 46% ABV with filtered rainwater. Distillation takes place in our 300 litre still through four plates over 12-13 hours, resulting in a base distillate of ~130 litres at ~85% ABV. This base is rested for ~ 2 weeks prior to being diluted with rainwater and blended with Parker Estate Rosé.

The result is bright and aromatic Rosé Gin with varietal flavours of fresh strawberries and cherries.

Signature Dry Gin

Our Signature London Dry Gin is blended to the spice end of the flavour spectrum to optimise serving with tonic and citrus.

Distilled with eleven botanicals including Juniper, Coriander Seed, Angelica Root, Orris Root, Almonds, Liquorice Root, Orange Peel, Lemon Myrtle, Cassia sticks, Camomile flowers, Lemon Verbena.

Core botanicals are soaked for 12-14 hrs in 96.6% Grain spirit prior to being loaded into the still with the remaining ingredients in the pot and gin basket and diluted down to 46% ABV with filtered rainwater.

Distillation takes place in our 300 litre still through four plates over 12-13 hours, resulting in a base distillate of 130 litres at 85% ABV. This base is rested for 2 weeks prior to being diluted with rainwater back to 40%.
