Known to be a particularly challenging variety to grow and make, Pinot Noir requires the perfect confluence of growing conditions and winemaking technique to ensure the result reflects the season.
Picked in the cool of night to retain the delicate balance of acid and flavour, the fruit was cold soaked for 48 hours before undergoing a warm ferment with plunging 3 times daily to carefully extract colour and tannin.
